In order to preserve these products in their fresh state, the chemical, biochemical, and physiological changes must be kept to a minimum by controlling temperature and humidity of the storage area. In several developing nations, the high expense of constructing cold storage or controlled environment storage is a major issue. It is well-known that evaporative cooling is an efficient and cost-effective method for reducing the temperature and increasing the relative humidity in an enclosure, and this effect has been extensively explored for extending the shelf life of horticultural produce in some tropical and subtropical nations. Consequently, the evaporative cooler offers potential for use in the brief preservation of vegetables and fruits immediately following harvests. The proposed system will be ideal for maintain these conditions and will be environment friendly as well as cost effective. The system will be standalone and will require a very minimal operating cost and maintenance, its operation will be simple and would not require any kind of professional intervention.
